Wholemeal Bio.Me Prebio PHGG bread recipe

There's nothing quite like the smell of a loaf baking away in the oven, and this one's a real treat. Soft, nutty wholemeal crumb studded with toasted pumpkin, sunflower and flax seeds, with a golden, seed-topped crust. Tucked away in every slice is a little dose of quiet fibre power too, courtesy of the PHGG, working away unseen and untasted while the loaf stays beautifully moist.
Ingredients
Dry Ingredients:
500 g very strong wholemeal bread flour
2 tsp instant yeast (7 g) or 20g fresh yeast
1 tsp sugar
10 g PHGG
2 level tsp salt (or 1.5 tsp for a less salty loaf)
Wet Ingredients:
450 ml warm water
1 tbsp olive oil
Seeds (for mixing into dough):
30g pumpkin seeds
30 g hulled sunflower seeds
30 g golden flaxseeds
Topping (optional):
1 tbsp flaxseeds
1 tbsp pumpkin seeds
1 tbsp sunflower seeds For preparing the pan:
A little oil (for greasing)
Instructions
1. Prepare the Dough:
In a stand mixer bowl fitted with a dough hook, combine both flour, yeast, sugar, PHGG, salt, warm water, and olive oil.
Mix on low speed for about 5 minutes until fully combined.
2. Add Seeds:
Lightly toast the 30 g each of pumpkin, sunflower, and flaxseeds in a dry skillet until fragrant.
Add them to the dough and stir in using a spoon or spatula.
3. Prepare the Pan:
Grease a 20 cm loaf pan with oil and sprinkle with bran or fine breadcrumbs to prevent sticking (coat both the bottom and sides).
4. Shape and Rise:
Transfer the sticky dough into the pan using a spoon.
Smooth the top with a wet spoon.
Sprinkle the loaf with the topping seeds and gently press them into the surface.
Cover the pan with a clean kitchen towel and let rise in a warm, draft-free place for 1.5h, until the dough nearly reaches the top of the pan.
5. Bake:
Preheat the oven to 180°C, top and bottom heat.
Carefully place the risen dough in the oven and bake for 40-45 minutes.
6. Cool:
Remove the bread from the oven and turn it out onto a wire rack.
Tap the bottom of the loaf - it should sound hollow, indicating it's fully baked.
Let it cool completely before slicing.
